Grapes: All bought, Muscat d’Alsace (45%) Sylvaner (45%) Gewürztraminer (10%). From 30-40 year old vines on rich clay-limestone soils. Muscat d’Alsace (red 25%, white 75%) and Gewürztraminer, both certified AB from Kintzheim. Sylvaner in final year of AB conversion from Ribeauvillé.

Vinification: Direct press Slyvaner and Gewürz into fibreglass. Infusion of whole-bunch Muscat with the Sylvaner and Gewürztraminer for 10 days. All pressed and put into neutral 600 litre barrels for 6 months on lees, until bottling in April 2023.

Fining: No Filtering: No Added SO2: No Production: 300 cases ABV: 12.5%
