Carignan, Syrah, Grenache Noir, Cabernet Sauvignon

Grapes: Carignan (70%), 40 year old vines from a small 1.5ha parcel on villefranchien. Syrah (12%) from a parcel belonging to Julien Peyras. Grenache (12%), 20 year old vines on basalt. Cabernet Sauvignon (6%) from young vines on clay-limestone. All vines around Aspiran.

Vinification: Carignan - three week maceration (60% whole bunch and 40% de-stemmed) then old barrel and fibreglass tanks for ten months’ ageing. Syrah and Grenache - co-fermentation for three week maceration whole bunch then ten months’ ageing in old barrel and fibreglass tanks. Cabernet - three week maceration de-stemmed in fibreglass. All blended in June 2021 just prior to bottling.

Bottled: Jun. 2021  Fining: No  Filtering: No  Added SO2: 15ppm  Production: 800 cases  ABV: 12%
