Red - Languedoc - Vin de France
Cinsault, Carignan, Grenache Noir, Syrah
Grapes: Roughly equal parts, all from around the village of Aspiran, north west of Montpellier - Cinsault (100 year old vines on alluvions/basalt), Carignan Noir (40 year old vines on villefranchian), Grenache Noir (20 year old vines on basalt), and Syrah (20 year old vines belonging to Julien Peyras ).
Vinification:Cinsault, three week whole bunch in fibreglass, Carignan Noir, two week de-stemmed in fibreglass, co-fermentation for Grenache Noir and Syrah, whole bunch for three weeks in fibreglass. Once dry, the Syrah and Grenache are aged together for 10 months - 60% in fibreglass and 40% in demi-muid. Exactly the same ageing for 10 months for Cinsault and Carignan, but in barrel instead of demi-muid. Blended August 2023 then put into fibreglass until bottling.
Bottling: Spring 2024 Fining: No Filtering: No Added SO2: No Production: 250 cases ABV: 13%
