Farming: Certified Agriculture Biologique

Grapes: Carignan (⅓) and Grenache Noir (⅓), 80 year old vine field blend in Périllos.  Mourvèdre (⅓), 40 year old vines on clay/limestone in Opoul.

Vinification: Co-fermentation for Carignan and Grenache N. All de-stemmed and put into stainless steel for 1 week. Pressed then back into stainless steel. Mourvèdre is de-stemmed and put into stainless steel for 1 week. Pressed and into foudre for 5 months. All blended in February 2022, one month before bottling in March 2022.  

Fining: No Filtering: No Added SO2: No Production: 300 cases ABV: 13.5%
