Grapes: Gamay d’Auvergne, 60 to 100 year old vines from three parcels on clay-limestone and basalt soils around Glaine Montaigut, Égliseneuve-près-Billom, and Saint Julien de Coppel.
Vinification: De-stemmed and crushed grapes put into stainless steel tanks for two weeks. Pressed, then pressed juice is blended with free run. Aged for 8 months - ⅔ is put into six 160 litre terracotta amphoras and ⅓ is put into two 250 litre flextank eggs. Blended, then into stainless steel until bottling in October 2022.
Fining: No Filtering: No Added SO2: Yes Production: 175 cases ABV: 12%
